The story of Etna is starry with the historic eruptions which have formed it. The eruption of 1614 is legendary for having lasted ten years, the longest ever, which halted right on the borders of the Sciara Nuova vineyards. This name is very evocative for our Cru of Etna;

Carricante with a small addition of Riesling. This lofty black land confers a fresh, fragrant and mineral style to the wine.
Vinification The grapes are picked into crates and refrigerated at once at 8°C before being selected by hand. After light crushing
and destemming they are soft pressed. The decanted must is racked and inoculated with yeasts, then fermented at 15°C for
20 days. The wine then remains on the lees until February with continuous mixing. It is then bottled.
Ageing potential great potential, from 7 to 10 years
Tasting notes
Color Rather pale yellow with clear green hints
Nose Typical of high altitude wines; green apple, white flowers and wild honey. Mineral and almost minty tones are apparent.
The wine is young and still has primary aromas which indicate a worthwhile development
Palate Acidic and fresh in the Etna style. Long and persistent with very evident fragrance
Food matching Ideal with fried oily fish, fish sauces and simple fresh hors d’oeuvres
