• Vineyards: “San Francesco” (8.10 Ha) and “Cozzo Ginestre” (4.25 Ha).

• Age of vineyards: “San Francesco” 1985, “Cozzo Ginestre” 1999.

• Training system: Guyot and spurred cord.

• Vines per Ha: 3.000.

• Yield per Ha: 4.5 t.

• Soil: Medium mixture with a tendency to wards clayey texture.

• Vineyard exposure: South, South-West.

• Harvest period: September 12th 2002.

• Must analytical data: Babo 21.0° - Tot. Ac 6.0 g/l - pH 3.60.

• Fermentation: Traditional in red.

• Maceration skin-contact during: 14 days.

• Fermentation temperature: 26/28°C.

• Malolactic fermentation: Totally developped.

• Refinement: 12 months in french oak (Allier e Tronçais) 300 l tonneaux,

60% new, 40% second passage; 8 months in bottle.

• Bottiling: May 26th and 27th 2004.

• Alcohol content: 14% Vol.

• Appellation: Cabernet Sauvignon D.O.C. - Contea di Sclafani.

ORGANOLEPTIC DETAILS

• Colour: Ruby red of very good intensity with garnet reflections.

• Bouquet: Wild berries, vanilla, black pepper, tobacco, cinnamon, mint, sage.

• Taste: Rich of ripe and concentrate fruit, soft, elegant, balanced.

• After taste: Tannin sweet and persistent, grapes.
