Etichetta vino SYRAH
- Production area: the vineyards on the hills of Monreale and Camporeale in the Province of Palermo
- The Syrah grapes are selected and hand harvested in small baskets.
- The ideal harvesting period is mid September.
- The destalked grapes are soft pressed and undergo a 12-18 hours maceration;
- Selected yeast is added;
- Alcohol fermentation at a controlled temperature takes place for about two weeks with repassing of the must over the grape dregs and délestage;
- Maceration for about one week after fermentation;
- Drawing off wine from the vat and pressing of the marc;
- Malolactic fermentation in stainless steel vats;
- The wine is then refined for 12 months in French oak barriques in order to mature the wine without adding a dominant oak flavour.
- Further 12 months refinement in the bottle will give this wine the scents of tobacco and spices;
- Colour: deep ruby red;
- Bouquet: a mixture of delicate berries with scents of violets, tobacco and spices.
- Recommended with: red and white meat based dishes, game, vegetable soups, cold meats and salami dishes and cheeses.
- Serving temperature: 18/20°C.
