L’Ecrù è un passito naturale prodotto con uve di Zibibbo. Per la vinificazione dell'Ecrù Firriato utilizza il metodo dell’infusione degli acini passiti nel vino, assoluta particolarità nel panorama vitivinicolo italiano. il processo di appassimento naturale dei grappoli per quasi 40 giorni. Il lento appassimento favorisce la concentrazione, in ogni acino, dei profumi della macchia mediterranea. Le uve vengono quindi sgrappolate e messe in infusione nel vino determinando l’unicità de L’Ecrù.

Altitude: the vineyards have a northly-southly exposure (from 250 to 400 meters above sea level)

Training system: cordon trained, spur pruned/Guyot

Harvest period: In the 1st decade of September the most mature grapes are hand harvested; the remaining ones remain on the plant until they get their best maturation

Nose You can smell fine scents of orange blossom honey, candied orange peels and dried figs, dates, peaches in syrup, which blend harmoniously with delicate hints of bay, citronella, marjoram, sage, oregano and oriental spices.

Palate: An enchanting texture that unfolds almost with a whisper with all the class of its noble lineage; the expression of Sicily’s warm sun enriched by subtle yet deep nuances of the sea and fruit that are both suave and exciting.

Characteristics: Aristocratic and reserved, it is a sweet and dynamic nectar with an extraordinary suave and polished persistence to be tasted also alone, in the intimacy of your home, because it makes a fine, powerful, and sensual companion, without ever being intrusive

Pairings: Sweetness calls for sweetness so we recommend it with a steaming apple and raisin strudel fresh out of the oven, Catalan cream, millefeuille with vanilla mousse, or orange pie with lavender ice-cream. It matches perfectly with foie gras and tasty blue-veined cheese.
