Cerasuolo di Vittoria is a red wine that is specific to the province of Ragusa, as well as parts of Caltanissetta and Catania. This ancient viticultural area dates back to the third century BC. The Cerasuolo di Vittoria began much later, however. In 1607, when the city of Vittoria was being established, the founder offered an acre of land to each settler that cultivated a vineyard. Thus began the passion. The Denomination of Origin was granted in 1974 and Guaranteed in 2005, making it the only D.O.C.G. in Sicily.
Production zone and comune: area of Bastonaca, Vittoria (RG) South-East Sicily.
Grape varieties: Frappato 40%, Nero d’Avola 60%.
Vineyards facing: South-East.
Altitude: 250 metres.
Soil type: medium consistency; formed of subalpine sands of Pliocene origin, of limestone-silicaceous nature, interwoven with compact strata of fresh clay and calcareous tufa.
Training system: spurred cordon with the fruit cane 70 cm. high.
Planting density: 5000 vines/hectare.
Average age of vines in production: 18 years.
Yield: 50 ql.
Harvest period: end september.
Fermentation equipment: stainless steel.
Fermentation temperature: 30°-33°
Length of ageing: 18 to 24 months.
